About our products.

  • What is ham? What is "jamon"?

Ham generally refers to to the meat obtained from the legs of a pig or a wild boar.

Ham can be raw, cooked or, as it is most often the case, cured.

Many countries produce hams, some famous ones are:

    - Spain: Iberian ham also called Iberico ham or Pata Negra (cured)
    - China: Jinhua ham (cured)
    - Portugal: Presunto (cured)
    - Italy: Prosciutto (either raw or cooked).

By far, the most celebrated and expensive is the the Spanish Iberico Ham.

Jamón, or jamon as known by foreigners, is simply ham in Spanish.

  • What is jamon serrano?

Jamon Serrano refers to the meat obtained from the legs of the White pig -Sus Scrofa Domesticus- or the Duroc pig and not from the Iberian Pig (also called Pata Negra).

Jamon Serrano is legally classified depending on the length of the curation process:

    - Gran Reserva: over 15 months
    - Reserva: between 12 and 15 months
    - Bodega: between 9 and 12 months.

Jamon Serrano is considered of inferior quality than Iberico.

The Duroc respresents a certain challenge for consumers as its hoof is black (like the Iberico) and not white like in White Pigs.

The regulatory text for Jamon Serrano (in Spanish) can be found here: http://www.boe.es/boe/dias/2008/07/14/pdfs/A30786-30787.pdf .

  • What is Jamon Iberico or Pata Negra?

For detailed information about what is Jamon Iberico, the different grades, origins and the production process please visit our Products Section.

In different countries the Iberico Ham is known under several names: Jamon Iberico, Iberico Ham, Iberian Ham, Pata Negra, Black Hoof, Spanish Iberico ...

  • I am craving for Iberico and I am pregnant.

Raw meats might contain a parasite called Toxoplasma Gondii that may lead to a disease named Toxoplasmosis.

Many adults have had Toxoplasmosis and did not even notice it, as the disease is only dangerous during pregnancy.

While Spanish ham is cured -not raw-, some doctors recommend that you do not take sausages or hams during the pregnancy.

If you are pregnant and still craving for Iberico, freeze it for 24 hours before eating it. Your ham will not be as good but... a craving is a craving!

In many European countries women get a Toxoplasmosis test during pregnancy, if your result is positive it means that you already passed the disease and have antibodies; in this case enjoy as much ham as you want!
